Artisanal liqueur production: quality and tradition

Liquorificio Mariani's artisanal liqueur production is the heart of our craft: a journey that combines centuries-old tradition, family passion, and technological innovation to create liqueurs, bitters, and spirits with a consistently balanced flavor. Every step, from the selection of herbs, spices, and citrus fruits to maceration, distillation, and finally bottling, takes place under strict controls and in full compliance with food safety regulations. Our commitment to liqueur production guarantees a product that expresses our identity, ready to be enjoyed in cocktail bars, restaurants, and Ho.Re.Ca.

Quality standards, safety and controls

  • HACCP certifications and European regulatory compliance ensure that each batch meets hygiene, purity, and safety standards.
  • Internal laboratory tests for organoleptic and chemical analyses: pH, stability, residual solvents, and alcohol content.
  • Full traceability, with visible batch numbers and a searchable production log, to ensure transparency and accountability towards the customer.

precision and reliability

Following all stages of production, from the purchase of raw materials to delivery to your premises allows us to have complete control over each phase of each of our products, guaranteeing you the highest possible quality.

Stages of the liqueur production process

Selection of raw materials

Quality starts at the base: we carefully select herbs, spices, citrus peels, and natural ingredients, favoring reliable suppliers, carefully selected over the years, and certified raw materials.

This guarantees absolute consistency in production and safety in every bottle.

The water we use is also constantly monitored. Furthermore, a modern continuous reverse osmosis filtration system guarantees the complete biological and organoleptic safety of every drop we use.

Maceration and infusion

After selection, the raw ingredients are patiently macerated and infused for the necessary time, under controlled conditions, to extract every aroma and flavor. In the case of bitters, gin, or flavored liqueurs, this step is crucial to achieving balanced and profound notes.

At this delicate stage, all the experience gained over nearly 50 years is essential to getting the most out of each herb or spice.

Mixing

We assemble our products in large steel tanks, diluting the aromatic component with water, alcohol, sugar, and other ingredients necessary to give balance and body to our liqueurs.

In these tanks, adequate time and powerful propellers ensure uniformity of production, from the first to the last drop.

Analysis and filtering

After a period of maturation and completion of the analyses that allow us to guarantee our quality standards, each product is carefully filtered to eliminate any foreign bodies or suspensions before being bottled, clear and crystalline. Distillation and filtration

Bottling, labeling and packaging

In the final stage, each liqueur is carefully bottled: the glass, cork, and seal are all inspected; labels are applied with precision on modern automated lines; the packaging provides optimal protection from light and temperature changes.
